The beautiful bounty of summer carries over into early fall. We have so much joy from our edible gardens: the Lemongrass is wonderful in homemade tea or in Thai food. We love nothing better than a late harvest salad made with our raw kale, zucchini, tomato, pepper and cucumber. For dessert, naturally: watermelon.</p>
<p><img class="size-full alignright" src="http://i0.wp.com/jessecology.com/wp-content/uploads/2011/09/20110922-103312.jpg?resize=180%2C240" alt="20110922-103312.jpg" data-recalc-dims="1" />There is something innately spiritual and healthy about being able to walk into the backyard and pick one&#8217;s own food. It is medicine if eaten within 1-3 hours of being harvested. Even at a farmer&#8217;s market or farm stand, it is difficult to find produce that fresh.</p>
<p>I encourage all my friends to plant some Garlic now, and also some crops to be used this Season. Root vegetables are delicious when roasted with Olive Oil and fresh Rosemary. Think Potatoes, Carrots, Parsnip, Turnips, and leafy greens like Kale and Swiss Chard. Some of the veggies actually sweeten with the cold weather.</p>
